Celiac disease victim to present clean eating tips

Tabor College instructor Carisa Funk will present information about clean eating at a special class from 7 to 8:30 p.m. March 17 at Hillsboro City Hall.

Funk became intensely interested in nutrition and lifestyle six years ago, after she was diagnosed with celiac disease.

Since then, she has adopted a whole foods/clean eating framework to manage autoimmune disease and reduce inflammation.

Funk will present facts showing that the standard American diet is undermining health and how clean eating can change that. She also will share resources, recipes, and ideas.

The free class is sponsored by Hillsboro Recreation Commission. To reserve a seat, call (620) 947-3162 or leave a form at city hall by 5 p.m. March 17. Walk-ins will be welcome.
