Pharm cooking: February is heart month

This is a big week for me. It is the last wrestling matches for Carson that will be here in Hillsboro. The league tournament is Saturday at the gym at 9 a.m.

Because Carson is a senior and this is his last home match, his brother is coming from Kansas City. He is bringing a friend. The friend doesn't know us at all and was worried that it would be too much trouble for me if they spent the night. Little does she know that an average weekend finds anywhere from 2 to 20 extra mouths to feed and who knows how many extra bodies sleeping in the basement!

We just sent the KU student who lived with us in January back home so we feel a little lonely anyway! I guess I will not know when the Jayhawks are playing nor hear cheering in the basement during games anymore! He tried to hold it down, but at times we heard the whoops!

February is the last month of trying to keep Carson's weight down. I need to take advantage of that and get mine back down to where it was pre-holidays. Also, February is heart month, so I can try to think healthier foods. I made some apple cranberry muffins for work the other day. Carson helped himself to several.

As soon as wrestling is over in February, we begin the high protein weight program to try to put healthy weight back on him. Why can't I ever be in the position of needing to gain weight! Life just isn't fair!

APPLE BRAN MUFFINS

1 1/2 cups of bran cereal shreds or crushed flakes

1 cup skim milk

1/4 cup margarine

1/2 cup honey

1 1/2 cups grated apple, with peel if desired

3/4 cups raisins or dried cranberry raisins

1 large egg

1 1/4 cups flour

2 teaspoons baking powder

1/2 teaspoon soda

1 teaspoon dried cinnamon

Soak cereal in milk 5 minutes. Add margarine, honey, apples, raisins and egg. Mix well. Combine dry ingredients. Stir into bran mixture just enough to moisten. Bake in greased or lined muffin tins at 400 degrees for about 20 minutes or until done. It makes from 12-18 muffins.
